Sunny at Last

This is the second nice day we have had. We were able to clean out one bay of the hay barn. Hope to clean out another bay tomorrow.
I bought an alpine milk goat today. She is very gentle and gives approximately one half gallon twice a day. I like milking goats much better than cattle. The leg reach is much shorter and doesn't pack near the punch of a 1200 lb. cow. Yes, I have had a few bad experiences with breaking a cow to milk and milking cows from the beef herd that, just for a few days, have too much milk for the calf. When you have to rope the cow, you somehow know it isn't going to be pretty for either party.
My goal is to almost eliminate going to the grocery store. So far, I have eggs, milk, vegetables, beef, pork, and by fall, honey. We raised corn and ground our own cornmeal last year. I would like to be able to get my wheat ground fine enough to make lighter bread. My bread tastes good but is dense, even for whole wheat bread. If anyone has an idea I would really love to hear from you.

    Have you tried sifting out some of the bran from your wheat? It might just be the ticket!

    I'm hoping to get a couple of milk goats soon but I don't really know too much about them yet. Like you, I want to try to be as self sufficient as possible. I think goats might really be a good thing to have. Milk and cheese!

Just wanted to say...you seem to have a "wonderful life" full of good fun and happiness...and I love "apple butter"..and in fact I introduced my DIL in Florida to apple butter (store bought..home made is much better)..and good hot biscuits...she is hooked...LOL...when I visit...it is an evening "snack" LOLOL...great blog...and yes..a day with the Lord...is a great day...hugs from Lexington

  4. I don't know if it will help or not, but we like the texture of bread made after "soaking" our flour. After grinding, mix your flour with the liquids called for in your recipe (except for the yeast/water mix)and add just a little whey or apple cider vinegar. Let soak overnight and then prepare your recipe as usual. This is similar to the "Sponge" method that earlier generations used.
